trolling plates work great. you will lose some control in a sense that the boat won't turn as quickly. because of that one thing, the manually lowered/raised plates are best instead of the one's with springs that go down automaticly when you slow down. bad at the dock... i put a plate on my big tiller engines for forward trolling
on the great lakes when, for spinners, i need to be under 1.5 mi/hr.
of course, the plates won't play a role when back trolling.

I agree. the plates work good. I had an aluminum one called the happy troller. It was well made. If you buy one, get one that has a shear pin, so if you forget to raise it or it does not lock in the "up" position, you dont bend the heck out of it. (speaking from experience!!)

Here's another idea:
Buy two trolling bags. Similar to driftsocks but much heavier duty to withstand the pressure of trolling. Rig one off of each springline cleat with just enough line to let it fully open in the roughest conditions you expect to fish in. This way they can't get in your prop(s), and don't get in the way when rigging lines and bringing in fish. Rig a tag line from the back end of the bag so you can bring it in easily. Bags should run $35-$50 each. They can double as a drift sock if you do any drifting. This is a very popular method of controlling speed on Erie. If you need a source for these call Denny at the Sportsman's Outpost in Vermillion, OH. 888 855-9032 and he should be able to help you.
Good Luck,
Steve
