ALOT!
I don't think that type of information would be available. They are taking more entries, and that's all the news there is until it's full.
I volunteer as a tourney director - how many spots left in a tournament is news that just isn't smart to make public. If it's almost full, people that may have entered will set their sights on another venue. If it's nowhere near full, people will not feel a sense of urgency to get their name on the entry form, and the process will take forever.
Until it's announcend that it is full, it's filling. Wether they have 10 entries or 150 and waiting for alternate entries.
Nothing shuts down getting alternate entries faster than saying your full. Somebody always drops out.
You'd be surprised how fast a small leak can get out too. If the FLW is smart - there is only 1 person in the world that knows how many entries there are - the rest of us are forced to wait.

I called about the Devils Lake, ND, event yesterday and was told that it was full with a short waiting list to boot. Not surprised.

I did get a call back today that if a person stil sent in to enter that you may still get in because there's typically enough cancellations due to whatever, and the people on the wait list oftentimes get in. If you're thinking of entering an event I'd send a deposit and then wait and see. I sent my entry off today for Devils Lake. I didn't read the post by Burr prior to posting the first time, but agree totally with what he said.
