I'm looking to buy a new pocketknife for fishing and camping. Any recommendations ? Kershaw, Gerber, Buck, etc., which do you think is the best one ? I want one that you can open with one hand.

Knife = Gerber...Everything else is just a sharpened rock. And, if you can get one of the older ones...ooohhh.
Really, I collect them...Gerbers...and the EZ Out is one of the best values around.

I probably have more pocket knives than any man desrves to have, and they are all "working" knives. I have carried Case XX, Gerber, Schrade, Buck, and PUMA throughout the years. I have been looking awfully hard at the new Kershaw knife by Ken Onion called the "Blackout" for the same reasons you are talking about. It has a speed opening mechanism that seems to be user friendly.
Now if I could only lay my hands on a Randall! LOL

Don't carry any thing that you don't want to lose.:) I have lost every one I have ever carried. I used to get the schrade and liked it the best. Now I carry a Leatherman. I don't lose them near as often. I don't know why that is, but that is the way it is for me.

Limited experience but I like my two schrades because they're easy to sharpen. I have two bucks that are nice but very hard steel and difficult to sharpen.

Benchmade, They are excellent.I have carried one for 6yrs. They are easy to sharpen and really keep an edge.
