Red snapper, Red Fish, Amber Jack, Cobia. Which of these fish taste better or has a mild fish taste (like the eyes) and no bones in the fillets? Have a chance to fish in Louisiana and dont know what to go for!

90% of the Cobias diet is crab. You like crab? You'll love Cobia. Used to Jig fish them under the Giant Manta Rays at Virgina Beach Pier and off a couple head boats.

Is cobia a white meaty fish with little bones? I love crab!

It's been 30 years since I caught one, but they can get to huge sizes so little bones don't fallow. They are kinda built like a cat fish bone structure wise. There meat is dense and I guess kinda whiteish. Their the fish you always see underneath and fallowing around the Big Manta Rays on all the Ocean TV documentaries. The Manta's stir up the bottom and expose the crabs when they feed, and the Cobias clean up on the exposed crabs. Some old pier Rat told me this last part years ago.

Surprised some of our salt water anglers haven't chimmed in on this one yet.

Cobia is good eating, but to me not in the same class as Snapper. You're right about Cobia getting big. The Florida state record is over 100 lbs. I've seen them 60 lbs. or better. Taste is a personal preference...kind of like which tastes better, walleye or crappies.

Whats the best way to cook Snapper? Pan fry?
Going to the Keys this October. Hopefuly we`ll get
some fish.

It's hard to find a way to fix snapper that is not good. Some suggestions:
1. Lightly bread and fry in pan.
2. Brush fillets with butter, cover with Seasoned Italian Bread Crumbs, sprinkle with garlic pepper, also you can sprinkle with Parmesan or another grated cheese you make prefer and broil in the broiler until golden brown. Yum!
3. Lay fillets on a piece of greased Aluminum foil, season with garlic pepper, lay slices of lemon on top of fillets, seal the foil and put in the Bar-b-que grill. Open the top of the foil for the last several minutes of cooking. You can brush the fillets with butter before grilling if you like.
4. Blackened Snapper. Pretty much pan sauted after seasoning with Creole seasoning. I prefer butter for cooking.
5. Open grilling in a grilling basket is also good.

Of those mentioned Snapper is definately the most like walleye and as Semper said it's hard to mess up. Now, if you want the BEST that saltwater has to offer make it up to Alaska for fresh Halibut, caught from icy Alaskan water UUMMMMMM GOOOOOD!!!

No reason....my suggestion was to fish for the species which, in my opinion, is the most fun to catch; not necessarily which tastes the best!

When I was down In Mexico I went to a Beach for a day and I ordered Grilled Red Snapper, It was some of the best eating in my Life. He Scored it w/ a Knife and put oil and Garlic on it over a open Flame was Great. Was the whole Fish Head and all, Just pick the fish with a fork. Very Tasty!!!!!

If weakfish,also called sea trout or speckled trout,are available at this time,fish for them ,too.They are wonderful to eat and are often in the same location as redfish.

Don't forget about Sheepdhead. This is an excellent eating fish. Just don't try to lip land these fish. They have a real set of choppers on them.

Weakfish and speckled sea trout are close but not the same fish. The weakfish runs much smaller in size and is found farther north up the Atlantic coast where the specks are larger and seek warmer waters.
Byand by this is the closest saltwater fish to the walleye in size, taste and texture.

If you spearfish you gotta get a HOGFISH.....to me it the best eating fish that swims. They usually wont take a hook. MMMMMMMMMM!!!!!

Also, when you are down south in Florida get some "Everglades Seasoning". Its a seasoned salt that goes well with fish and other stuff.

Yes - sheephead are also very yummy - what they call sheephead down
there is a black and white striped snapper like shaped fish with
wicked sharp choppers - catch them with live fidlar crabs dropped along pilings - they love to hang around vertical structure

What is a redfish vs red snapper? Red fish is a drum? Isnt that like a carp!!? Is snook good to eat?

Is a snapper a snapper? Red snapper, YellowTail Snapper, Mutton Snapper, Mangrove Snapper,Lane Snapper??? They all taste the same or all just as good? And what about the groupers??
