My favorite rigs consist of just 2 #6 mustads tied with small beads and a double 00 indiana blade. If there is very much debris such as broken rock or timber, the two hooks catch a lot less snags and a lot more fish. Start at the nose of the crawler and let the tailend drag and flip in the current. If they start biting the tail off, shorten up. I'll often attach a bobber a foot or so deeper than the depth and let it drag the rig a few feet away from the boat, as I drift with the current downriver.

Yes, I like using them as a single behind a phelps floater carolina riged for when the walleyes really get finicky. I'll either hook a whole crawler or a minnow just hooked through the lips and work them very slowly through the holes.

Phelps floaters are little pill/capsule shaped styrofoam floaters. They go by and are sold under other names as well. In fact Phelps now makes them in different shapes with little eyes painted on and the hooks molded in. Your line goes through the middle of them and keeps your offering off the bottom. They come in all the good walleye colors. I like to also add a couple small 8mm beads in certain instances. Even build harnesses with them in the middle to keep things off the bottom more.
