Try a Russell/Dexter knife and you`ll see how a very well made filet knife works.They are also easy to sharpen and the edge holds a loooong time.I have probably fileted well over five hundred fish with mine in five years.Mostly big salmon,trout and eyes.My second choice Forshchner.But both are mighty fine knives for the $$$ spent.......Wahoo
Schrade is the best I've found and I have used several brands. Keeps a good edge and is just the right size even for the larger fish.
I take a lot of pride in cleaning fish. You can't beat a forschner for a salmon or steelhead, but for walleye I would say Scharade. They used to make a bass fillet knife with a graphite handle. Same blade as the uncle henry which is very popular, but I like the handle better.
I own a Rapala, Cutco, Chicago Cutlery, Forschner and do not like them as much as a Scharade for walleye. I also don't like that old timer (Sharade) with the green handle very much.
I don't skin them with the Schrade. I like to use a fillet board with a good stiff clamp. For a knife I have long flexible blade (unknown brand) knife that I use for that. Actually someone else usually skins them.

Hope this helps. I will promise you that these knives are the sharpest, you've ever had in your hand, and they resharpen them anually free.
Great knives but I like mine stiffer.

I must have odd shaped hands. I only like my Buck filet knife. My buddies hate it. Handles kinda weird but I love mine. My favorite knife tho is the one the kid at the bait shop uses when I have them cleaned there.

I really like Leech Lake Knives but I do not like the sharpened back edge.
I have only used other peoples LL knives but I bet you can order one with a non sharpened backside.
I cut my fingers with the back of the knife.
That said, I timed a friend taking fillets off the perch carcass at 4.5 seconds for both fillets on 1 fish and he really like using a butchers boning knife that had been sharpened to 3/16 inch wide and really stiff about 6" long and not real sharp but all right sharp.

I 2nd your friend's knife;
I prefer a knife that is the right size for the fish being filleted.
i.e. shorter for small fish, and longer for larger fish.
I also prefer a much stiffer knife than many folks.
With the stiffer knife; I can use it to help shape the fish as I am taking the fillets off the fish.
I also tend to like a knife that has a rather straight edge; rather than a knife that has a long pointy tip. The problem - for me - with the knive's that have the long slender pointy tip, is that they get too flexible and the knives are too narrow near the tip, to give me a quick fillet.
I actually prefer a "petite boning knive" for most of my filleting.
About the right length, right stiffness (pretty stiff) and a long straight edge with a quick breaking tip.

This is as sharp as the Leech Lake knife(same steel) and has many different colors. I have the Leech Lake knife and the knife from custom cutlery. Only difference the custom cutlery knife doesn't have the sharpened backside. I have cut myself a few times with the Leech knife when I got careless. This is $30 dollars cheaper than Leech knife.

This is actually the company that produces the Leech Lake Knife. Same steel same handle, same shealth, not sharpened on the back side.
