What does everyone use to replace the hooks on jigging spoons. I like Hopkins but the hooks aren't sharp enough. Also What size is best for 3/4 oz and 1 oz models?

There a lot of great trebles out there, eagle claw, gamakatsu, excalbur. Myself i light a light wire hook.,They will bend sometime and come out of a snag.. If you know you got a big fish, play it a little more, Color??? undecided. RED they say is invisable or looks like bleeding fish.???chrome/ stanless steel. shinney(like fins or scales. bronzeor black .Low vissablity. you have to decide for your self.

As for the jigging spoons go try using "Bass Pro ShopsŪ Strata Spoon" they are just as good as the "Hopkins" but are a lot cheaper.
As for the hooks .... WALLEYE DREW said it all.

Mustad 35647 (I think) are the ones I prefer. They are fine wire that bend when snagged and are quite sharp... laso make great stinger hooks...
