What is zippering a fillet? Removing those tiny bones that run through the middle of each fillet?

it's called zippering because when done just right it feels like a zipper as it comes free. it being the lateral line. make a small cut on each side at the tail end grab the back and belly pieces in one hand and the lateral line in the other. pull it down and away. you end up with 2 bone free filets and the lousy tasting lateral line.

I fillet my fish this way all the time. Then when I cook them, I take the 4 pieces that I get from each fish and cut them in 1/2 before frying. Each fish becomes 8 pieces of finger food, and the kids love it.
