Jarhead,
let me know how it tastes. Going to New Brunswick in May for a bear with my bow. Wondering what to do with the meat myself. (IF I get one) I've heard it's not the best tasting stuff..
Bob p.s. congrats on your bear

Bear Recipe
1-2 lb of venison or bear steaks
1 qt of tomato juice
3/4 cup brown sugar
2 tbsp Worcestershire sauce
1/2 tsp black pepper
1/2 tsp celery seed
1 medium onion (diced)

Cook meat until thoroughly cooked in a slow cooker or crock pot.
Drain off fat and add ingredients above.
Let simmer for at least 4 hours.
I recommend serving with mashed potatoes as the gravy is excellent on them. This recipe is simple to prepare and doesn't take a lot of special ingredients.

My brother makes some of the best bear I've ever ate. He fixes it in a slow cooker and I believe he uses chicken broth. Add what ever else you desire. Potatoes, carrots, onion. It is really good

I have only shot one bear in my time but all of the advice I read and was given is that you should treat it and cook it just like you would pork. Make sure that it is cooked thoroughly and well done. You don't want to serve bear anything less than medium for sure but probably better off well. My bear meat was pretty tasty, actually kind of rich or sweet tasting but good.

Cook just like any other wild game. Smaller bears tend to be tastier than the big bruins. The biggest trick to tasty eating is removing the fat as it cooks off.
