What is your favorite deer jerky mix? I usually use hi mountain, but just tried backwoods and I think i like backwoods better. Like to here what other hunters use.

I used to use various store bought mixes, some are pretty good, some horrible! I like this recipe for venison, duck, and goose.

3 lbs. Venison, sliced 1/4 " thick by 3/4" wide.
1/4 c. Liquid Smoke
1/2 c. Soy Sauce
1/2 c. Worchestershire Sauce
1/2 tsp. Cayenne Pepper
1 tsp. Accent meat tenderizer
1 tsp. Garlic Powder
2 tsp. Onion Powder
1/2 c. Warm Water
chili pepper seeds, to taste


Mix ingredients together well and soak meat in it for 24 hours (a zip lock bag works great).

I make my own like Birddog says and mine is really close to his.

3 lbs. Venison
1/4 c. Liquid Smoke
1 c. Soy Sauce
1 tsp. Black Pepper
1 tsp. Accent meat tenderizer
2 tsp. Garlic Powder
2 tsp. Onion Powder

My wife like the jerky extremely thin, the trick for this is to cut the meat when it is still partially frozen. Cut it then let it bleed out, dry it off as best you can then marinade it for a day or two.

I also like the High Mountain but some time back I did a 'google' search(google.com) and entered the words beef jerky, I had more pages of recipes than I thought possible. I found everything from home made cures and rubs to comercial mixes. It's hard to beat good jerky. Good luck,
