Will the Minn Kota Maxxum stay in the direction I point it, or will it turn on me as soon as I take my foot off the pedal?

it will move, unless your power setting is really low and there is no wind. I fought with that stooopid pedal for 4 years, bought a hand controlled motor last year.

Under the front of the foot pedal there is a tension adjustment screw. You can tighten up the steering some. That'll work in calm water. For rougher water you could try cutting a wedge of wood to hold the pedal so the motor is 'straight'using bungies to hold the wedge in place. Two wedges, front and back of the pedal (under it) might work even better.
