I am interested in buyng some of the 07 or 08 2010 Lund Pro Guides but all the Opti's have the old tiller handle with the shifter at the base of the handle. Does anyone know if Lund can swap the tiller handle out for the new Big Tiller Handle?
The new handle can be mounted on the motor, but it's not inexpensive. I do think you would be ahead to find a boat with what you want, than paying for the modification.

I've got the Big Tiller installation manual, either register and send me a PM, or post your email address and I'll send you a pdf of it. Basically, you need to find a Mercury dealer that knows what he's doing, it's not that bad of a job. You have a couple of options, a non-powered version, or the power steering version, which has a pump that needs to be installed. Where are you at, maybe I can help find a dealer for you?
