I currently have a Lowrance 510c and want to add a GPS to the boat. I'm thinking about a HDS-5 w/ Lake Insight.

Would it possible to interface these units, so that I can see a "High Definition" sonar picture on the 510 and use the HDS as a full screen GPS? Would I just be better off trying to find a non-current 520c or 522c? I know those would work together. Also, do the HDS units use a different transducer plug than the 510c?

The HDS and the 510 use the same transducer. You can link them together thru the yellow ethernet port to share transducers.

Your 510 and the HDS can "share" the same transducer, using the ethernet cable as noted. But your 510 sonar will look like it always has - there will be no change because you have the HDS too. If you're happy with it, then you can leave the HDS in GPS mode all the time. But the only way to get "High Def" on two different screens is to buy two HDS units.......
