On my WarriorTrail, it says to just hook the grease gun to the zerk on the hub and push the old grease out the backside until new grease comes out and I'm good to go. My question is with everyone on here talking about bearings and seals, is that all I should do? or should I take apart the whole bearing assembly and look it over?

There are a lot of guys who like to tear the bearings apart every chance they get, and not surprisingly a lot of them get really good at it because they have to do it over and over. Sealing things up so water can't get in is tough. Water intrusion results in more boat-trailer bearing problems than all other causes, several times over. Unless you really know what you are doing, I'd just pump the hubs full every three months or so.

I would pull them, inspect and service as needed.

Sounds like you have one of the "EZ Lube" systems. They are meant to eliminate having to pull them apart every year to completely regrease them. Some push the Grease all the way through the spindle center to the rear bearings 1st,then push back out the front. Some push it all the way through the back. To exchange the grease you need to start with a completely full cartridge (14 oz) and pump it through til all fresh grease comes out. On a single axle you will probably use nearly the whole cartridge.
The whole idea is that with a grease gun you can completly exchange all the grease. These systems work well ,as long as you do it EVERY YEAR ! If you have not done it in awhile,or have never done it, you may want to disassemble and inspect. If the rig is new,you should not have to disassemble. You really only have to disassemble every year if you are using a common spindle and hub assembly with bearing buddies type caps or plain caps, because there is no way to exchange the grease on those without disassembly.
All that being said,,it probably isn't a bad idea to disassemble an EZ lube every few seasons just for inspection. Another reason would be if you decided to switch grease types,..say from lithium to some other like calcium sufanate,as different grease types are not compatible and should not be mixed.
