957's are being dicontinued and replaced with newer models. To utlize Down Imaging you would need to get a Side Imaging capable unit, like a 997c. The standard sonar units will not work with Down imaging. There are 997c's on sale for around $1500 now, but they are getting replaced by the 998 in Jan.

I dont have any experience with the QUAD transducer.
Cabelas has the best deal I found on the 997 units. Be aware, with the oversize transducer I have found it hard to track bottom over 25mph and have thus installed a second, high speed transducer.

I had good luck with mine reading to over 45mph, but I was afraid of hitting on something and breaking it. I moved it to the jackplate and mounted a standard transducer for high speed reading in it's place. The quad beam transducer will read at higher speeds as well.
I've never used a sonar/transducer that could show structure at 40mph. It'll be obvious if you're going over weedbeds and you'll be able to see the hardness of the bottom (rock vs. silt). However, bushes and trees are hard to pick up when you're crusing at 60 feet-per-second and imaging at 3-4 pings per second. structure just shows up as random dots. Sometimes they're fish, sometimes they're bubbles, sometimes they're structure.
To be honest, I'd get the 997. It'll be $500-700 less than the 998 because they're getting cleared out everywhere right now. From the screenshots I've seen down-imaging isn't an upgrade at all over standard sonar. It just looks like another color scheme to me. I have found that side imaging has helped put a lot more fish in the boat (especially on slow days) and is worth every penny. Due to the speed of sound in water, even side imaging is only going to ever have good details up to about 10-15mph out 100 feet on either side nomatter how fast the electronics get.

I have the 957 and love it. I don't have the quadtransducer but looking at it through the simulator it seems pretty cool.
You are correct about the 957 not being availble at most locations but I found mine at:
www.reedssports.com
I went to this unit from a Lowrance and love it. Compared to Lowrance I had it actually worked out of the box.
And another perk about Humminbird! I called their 800 number to ask a question about an accesory I was interested in and guess what??????????? Someone actually answered the phone and aswered my question.
