Boys, I'm in heaven. I just pulled out the 3 walleye slabs I put on the smoker last night. I cant believe how much like white fish they taste. Same texture, same taste, same full bodied aroma. I used my old smelt recipe, after being told walleye take on the salt a lot more than fatty fish like salmon or lake trout. Any of you guys ever try this? Capt: Dan.
