I'm thinking about doing a restoration of my 93 pro v. Is there anything I should know before I begin taking off the floor? Any pitfalls that are eady to fall in to?

Just be prepared for breaking off screws / sripping out heads and have patience.
You sound confident enough to know to keep everything for patterns until the new pieces are installed.
Also you should be planning on replacing the rub rail inserts and have lots of clamps when gluing carpet on covers ( Corners ) ...
Be sure to check absolutely every piece of plumbing, clamps, fuel lines and wiring for wear. It's much easier to fix anything at that time.

Having watched my brother do a few boats now, my only word of caution would be this -
How ever much you think it's going to cost - double it.
How ever long you think it's going to take you to finish - triple it.
It can be rewarding, but it not easy, there's always more work and expenses than you plan on, and there's not a lot of money it.
