I understand the process when a lake turns over but how does the walleye react to this? Thanks.

Well up here in the northwoods of Wisc. in the fall when turn-over happens the dead and loose alge and weeds are now mixed in the whole water colum and oxygen is also spread out from the surface to the bottom. This allows all fish to go where the thermocline prevented them from going before in search of food. This last for about 2 weeks, before the water settles down.
