In the spirit of July 4th the ol' Bullfrog has decided to release to the rest of the world one of the most highly guarded national secrets-(Bullfroglabatts Famous Huspuppies) in hopes of generating goodwill amoung fishermen everywhere. Seriously, folks I have received so much help from the people on this thread(especially Dean Clifton) that I wanted to share this recipe from down here below the Mason-Dixon line. And again thanks to all you Yanks who have taken the time to give me help and advise on Walleye, perch, and Smallie fishing @ Lake Erie. 3 cups white corn meal, 1 1/2 cup flour(not all pourpose), 3/4 cup sugar, 2tsp baking soda, 4 tsp baking powder,2 med. onions finely chopped, one cup Jalapenos finely chopped, 1 1/2-2 cups buttermilk enough oil to put 2 inches in your pan or use a deep fryer. Mix all dry ingredients in a large bowl. Put onions and jalapenos in food processor and chop fine. Add buttermilk to dry mix until the consistancy is slightly thicker than pancake mix. Add onions and jalapenos and stir together w/mixture. Using a candy or oil thermometer heat oil to 325 . Scoop a little glob of the mix in a spoon and drop it in the oil to test. If the mixture is like dough and forms a ball in the spoon it is too thick and needs more buttermilk-it should be very sticky and get on your fingers when you push it off the spoon withyour thumb. the test puppy is done when it is between golden and dark brown. bite into it and if it is done inside continue to drop pups a dozen at a time making sure to keep your oil @ 325. These are best if using the oil that you used to fry your fish. There you are-you have the ol' bullfrogs personal gar-on-tee that these are the finest on the planet-Enjoy!!

BTW I'm comming up Sun afternoon to South Bass and I'm kind of new to the Radio-what channels should I monitor for help on current locations for walleye and perch locations to get me started? I normally swich back and forth from weather to 68.

I have a recipe very similar to yours. Hushpuppies and walleye are a great combination.
If you want to try something different for coating your walleyes use the above mixture without the buttermilk. Put into plastic bag with fillets and shake. Then place fillets on a plate with a layer of tinfoil then fillets then tinfoil. After placing on plate put in refrigerator for a couple of hours. This draws the moisture out of the fillets and makes a batter. No drip, no fuss no muss. Pop them into frying pan or deep fat fryer and enjoy with the huspuppies.
Thanks for the recipe. Can't wait to mix up a batch this weekend. Might have to pass on the jalapenos though - growing up in Wisconsin, the spiciest things we ever ate were brats, aged cheddar and milk!

I'm with you Dave! Where I come from, milk is a spice. :)
Good Luck
