I have a Lowrance X15-MT which I REALLY like. Whether I am going 35 mph or at a slow troll, I get an excellent readout on the screen, with good fish arches, bottom contour etc. However, when I am anchored and sitting still, the "fish" show up more like long reed-like structures. Should I be able to sit still (anchored on a calm day), and still get a good display of whats going on down below?

The arches will become long if you are anchored or moving very slow. The arches you see when you are moving are arched because you are coming up and off the fish. It should give an explaination of this in your manual.
you should get a good display anytime

If your sitting on the fish it will constantly bounce the signal back, hence the line. Think of it this way.The screen is not a picture, it's a memory of the individual pulses.
