Herter's recipe: Cut the fillets into 2 to 3 inch pieces. Drop them into boiling salt water. When they are almost done remove them from the water, drain, and finish them up by frying them in butter. The Y-bones are easy to expose and slide out easily. The meat will be moist and delicious. This has become my favorite recipe for northern.
