what is a good medium priced fillet knife? Perferably one that of course holds an edge.

for the same price as an average medium price fillet knife, you can get an excellent electric fillet knife.

Virtually all of the guides that are successful and catch lots of fish for their clients - use electric knives.

In our group of Walleye fishermen, we all now use electric knives.

The advantages are:
1. Quick
2. Easy.
3. Minimum waste
4. Never needs sharpening. A new set of blades run about $6 and - if the knives get dull, simply throw the old blades away and insert the new ones.

On my current knife, I have cleaned hundreds of fish and I am still on the original set of blades.
For the late winter fishing trip, several of us were up on northern mn, and we caught several hundred perch. The electric fillet knives made short work of these tough skinned tasty little creatures.

After chopping up a half dozen or so fish, you will get the hang of using the electric knife and not go back.

I have had many knives in past years - very inexpensive to very expensive. All razor sharp and capable of cleaning lots of fish. However, for the reasons above, I haven't used a non electric knife for the last two years.

Take care
