Just wanted to post a great conversation with Don Canney. I have one of his larger models that needs sharpening. I have used it on many fish and it is absolutely the best knife I have ever used. He was very kind in telling me how to sharpen it myself or I could send it to him. I also asked if I could purchase one of his perch model knifes. Since he was going to Vegas for a show, he said he would send one from there if I sent my money. I did and am eagerly awaiting that knife. If you are looking for a great knife for filleting fish I would highly recommend one of his. They may be pricey, but quality sure comes with it. Happy filleting.
