Need a recipe for pickeling Northern.
1. Filet and cut northern into small pieces.
2. Pack into glass pickling jars.
3. Add strong ½ cup of salt for each quart of fish. Cover with white vinegar and let stand four days in the fridge.
4. Rinse and let stand in cold water for ½ hour.
5. Pack loosely in jars, adding slices of onion between each layer.
6. Cover with following solution: (Cold) 1 quart white vinegar, 1 pound or 4 cups sugar, 5 ounces of pickling spices. Mix these ingredients well and use a cup to pour over fish in jars. Seal and let stand one week before using.

Here's another:
1 cup salt to 4 cups water or enough to cover. Let stand 48 hours in frig. Drain and rinse well in cold water. Put back in bowl that has been washed and cover with white vinegar for 24 hours. Remove fish and drain. Do Not Rinse.
Make a Brine:
2 cups white vinegar
1 and 1/4 cups sugar
2 tablespoons mustard seed
4 bay leaves
5 white cloves
1 tablespoon allspice
1 tablespoon white pepper
Bring brine to a boil and cool. Put fish plus a generous amont of onion slices in wide mouth jars. Pour brine over and keep in frig. 10 days. The longer the better.

I just started pickling fish myself this winter using pretty much these same type of recipes. I have read, one in a newspaper and one in a cook book, where you should freeze your fish for 48 hrs. before pickling to kill any critters that may be in the fish. Don't know how true this is, but I have done it and the fish still turns out excellant
