I've read posts recommending that VHF antennas should be mounted away from other electronics, but what is an acceptable distance? What are the problems if it's not installed far enough?

The further, the better, but at least 6 feet minimum -- 12 feet would be better yet.
A 25W transmitter can put some pretty significant RF into other systems like your GPS or sonar, disrupting it at best, or destroying it at worst. The GPS receiver is designed with very high-gain front ends -- the transmitter it's listening to is low powered and thousands of miles away -- and having a nearby transmitting antenna is sorta like having a cannon go off next to your ear.

Hans, I've seen several of your posts about electronics, so I'll ask the expert. I have a glass backtroller. Would you recommend the vhf antenna on starboard and GPS on portside (the electronics panel and all wiring is port). Thanks in advance
Yes, that's a good plan, and not directly across the boat from the GPS antenna if possible.
