anyone familiar with any canadian lodges hosting medical conferences? or that have done so in the past?

I do not know of any camps in our area of NW Ontario that host a conference but as a camp owner, we might be interested in doing so. Check our web site at www.whitefishbaycamp.com. Good fishing Bob and Peg Hunger
I'm not sure of the names of the Lodges but I do recall some and they were mostly in Northern Manitoba or the Northwest Territories.

there are several 5 star resorts such as knee lake.

Kasba Lake Lodge in NWT does at least one per year.The lodge looked very impressive.Contact them at www.kasba.com.

There are several resorts in the Muskoka Lakes area that have capabilities for that. The fishing can be good, but the lakes are for the most part heavily travelled. The Muskokas are about 2 hours north of Toronto.

Plummer's Great Bear Lake lodge used to have one during the summer put on by a couple of FP's from U of MN. I forgot how many hours of Cat I
there was, I think it was 12 hours? Pretty generic topics.
I was going to try get my CME stipend approved for reimbursement by my senior medical director, but the brochure was just too plastered with fishing details, with sidenotes on CME.
Darned, if that brochure was the other way around, I think I would have gone.
