Hello everyone! I used to live in Minnesota, where I ate many more walleye than I ever caught! Anyway, I'm about to get addicted to walleye fishing again in Greer's Ferry Lake in central Arkansas, and I am looking for some good beer batter recipes--or any good walleye recipes, for that matter.

I use one from the back of a Bis-Quick box. Works well. Just be sure the beer goes in the batter.

The usual flour, then beaten egg, and Italian bread crumbs(progresso my favarite) add a little parmesagn cheese and a small amount of salt,pepper and paprika. Fish haters even like them like this!

Fryin Magic makes an excellant dry fish coating. Use your favorite dry mix and blend with beer(or water), make it fairly watery. In a baggie or bread bag put in a couple of cups of instant potatoe flakes,pepper to taste, a couple shakes of parmesan cheese, and maybe a couple shakes of cayenne pepper(optional). Dunk in wet mix, shake off excess, throw in dry mix, throw in hot oil for a few minutes and hold on to your socks. Outstanding stuff!!! Try it, its good stuff.

P.S. The flakes seem to have enough salt to where you should not need to add any(just "my" preference).If you have company you can add a tbl. spoon of parsley for looks!

Here's another vote for Fryin' Magic. It is a fine, delicate coating that lets the walleye flavor come through. Most beer batters I've tasted or used have obscured the good fish flavor I want when I eat fish.

However, I don't know how those Arkansas 'eyes taste. They probably swim slower, belch with an accent, and say "Yes ma'am" and "No ma'am."

Whoo-hoo, RS, that sounds good--almost like I should cook the batter and throw away the fish! Ever hear that old carp recipe joke?

As for southern-accented walleyes vs. the northern version, I'm sure they have one thing in common: they wouldn't mind getting soaked in beer before cooking...

I'm not going until 5/17, so I'll give all you northern boys a shout afterwards. Thanks for the recipes.

Always wanted my fish to be crispy, but never could quite perfect it. Then a buddy of mine told me to do this, it is great.

Roll fillets in your favorite flour mixture, shore lunch, fry magic what ever.

Dip in mixture of egg and beer, and ROLL IN POTATO BUDS.

The fish turn out crunchy and brown nicely.

I know the theme is beer batter recipes, however I don't like heavy batters. I prefer just to dust in Fry Magic and pan fry in a little butter. If I can't get Fry Magic, I use a few plain bread crumbs with pepper and a little Lawry's added.
