Where is a good website or source that describes how to fillet a walleye correctly? I have struggled with it in the past and want to learn how to do it right.

The zipper method refers to removing the lateral line and the fine bones that it contains. Easy to do, hard to explain.
Place one walleye flat on its side and cut down behind gill plate til you hit the backbone and stop. Turn knife 90 degrees and cut through rib cage along back bone to tail...don`t cut the filet all the way off...leave it connected and flip over the filet to face skinside down. Remove filet from skin. Take filet and lay it rib side down on the table. At the tail section you will find a reddish brown line that runs the length of the filet. At the tail, make a 1" long slit through the filet just above the brown line. Now take the top portion of the filet and peal it from the rest of the filet and place it in ice cold water. That is the top boneless section of the filet. Take the remaining portion, and make a slit under the lateral line. Take hold of it and peel it from the filet. It will come off in a strip that resembles a zipper. That zipper contains the fine hair bones that run in the lateral line. Remove the rib cage from the bottom portion and you have two completely boneless strips of walleye filet. Repeat this process on the other half and you get four pieces per fish. Like I said, easy to do once you see it done, but kind of hard to explain. I`m sure others will have more points to add. Best I could do. Beav
