We have been catching lot of good small eating size walleyes this year and we love to eat them breaded and fried, but I raalize that this method isn't real healthy. Has anyone found a way to cook walleyes that still tasts good and is healthy. I have baked them and grilled them but nothing seems to come close to frying.

I know we have some great cooks on this site, so any good recipes are apreciated.

Try this,
Dry your fillets, then coat with olive oil. Once coated with olive oil sprinkle them with Blackened Red Fish Magic, throw them on the grill, turn once ( I roll them over as opposed to flipping) . Cook until done, about 3 minutes a side. Yum!! The Blackened red Fish seaoning is spicey but not hot or overpowering. I like walleye prepared this way just as much as I like it fried.
I have foung that the big are best on the grill.

Use olive oil. It's healthier for you than the other oils. We recently tried "Golden Dip" tempura batter. The batter can be mixed using ice water or beer. The tempura batter forms a crust when it hits the oil that keeps the oil from soaking into the fish like it does when using breading. For pan frying you can use your favorite breading, we like "Bookbinders" the best, and coat a non-stick pan with olive oil "Pam". For baking / broiling use your favorite breading and brush a tiny amount of butter on the filets.

My favorite way to eat walleye is to melt a stick of margarine in a pan, pour in a couple tablespoons of lemon juice, throw in a teaspoon full of garlic salt or so and fry it. It is absolutely awesome. Also you can eat more because you don't fill up with breading.

Health-wise, margerine is one of the worst oils for you. You're better off with butter, or best yet is olive oil. But there's something about the delicate flavor of walleye cooked in rich, real butter. But not a whole stick! A tablespoon or two will do. I cooked five 'eyes in three tablespoons tonight.

Get a large non-stick frying pan and you can pan-fry the fillets in a tablespoon or two of butter. I usually dust/thinly coat the fillets with either Frying Magic or with flour seasoned to my liking. Quick, easy, very little fat, and delicious.

It is the only way I eat fish as I don't care for deep fryed fish. Great for panfish. With fresh panfish fillets it takes only a couple of minutes on both side and their ready to eat.

Believe it or not, the microwave makes some pretty tasty fish too. Get a microwave safe caserole dish that has a cover, cover the bottom of the dish with filets and baste them thoroughly with butter or some type of oil to keep them moist. Season with whatever trips your trigger and cook on high for 5-8 minutes depending on amount of fish and microwave. They come out tender, juicy and above all, TASTY with no breading and still moist!

I've used this recipe a couple of times this season and think its good.

On some aluminum foil put some diced sweet onions. Lay fillets on top of onions. Brush lightly with olive oil. Spread some sun dried tomato pesto sauce on each fillet (I found this by the spaghetti sauces). Put another piece of aluminum foil on top and wrap edges to seal. Bake at 350-400 for 20-25 minutes.
