View Full Version : Storing deep-fry oil after use

How do you fellows store your oils? Besides frying fish I've just started to fry turkeys and was told not to refrigerate the peanut oil as it will breakdown. Is it safe to store at room temp for a whole season or pitch the used oil and start fresh each time ? Four gallons of peanut oil can cost as much as the bird. Thanks for any replies.

We pour it through a commercial filter. (Looks just like a paper paint strainer) Then return it to the four gallon container. My brother has not changed oil for a couple of years. But then again he's pretty tight fisted with the $$. Tastes OK, especially when it is his food we are eating!

I use peanut oil almost exclusively for frying my fish, fries etc. After each use, I strain thru cheesecloth or a fine mesh strainer. If I know i'm going to be using the fryer again in a few days, i put it back in the fryer. Otherwise I pour it back into a one gallon jug. Store in a cool place and it willl be fine. I only change if it starts to get kinda dark.
