Wanted to reply to your post but error messages came up not giving me a place to repond. We use a Brinkman water smoker. Uses propane tank. Feel it keeps a good steady temperature. Not much babysitting. We smoke a lot of salmon. Have smoked pork loin and turkey also. Using water keeps meat moist and we sometimes add citrus slices to the water to enhance flavor.
