Am trying to find out how to order a walleye breading I was given at Ted Takasaki's "Walleye Institue" in Rolling Meadows, IL. The package (which I don't have any longer cause I used it all up on some great walleye in Ontario earlier this month) said it was made by Legendary Northwoods and had the www.walleyecentral.com website on it. It is call Cajun Walleye and has a great flavor. I tried calling the Walleye Central telephone #, but didn't hear anything back. Also tried looking for Legendary Northwoods website, but no luck.

Any help would be appreciated. Thanks

I can't help you with exactly what you are looking for but there is another brand out there that we use exclusively and you may want to try it in the interim.

Shore lunch is the brand name and it comes in three flavors one of which is cajun. the others are original and italian. We use the cajun and mix it half and half with the original because one daughter doesn't like full strength cajun. We also add about equal to almost double the potatoe flakes as what we use for breading for an additional taste. Yummmy gotta have some tonight.

Menards has been carrying the product lately at a very reasonable price compared to the grocery store.

If you are interested, it is really simple to make your own - Simply mix the breading (your choice of flour/pancake mix/bread crumbs/ potato flakes) to fill a large freezer Ziploc bag 2/3 full...Then add your cajun seasoning to taste - about 1/2 of one of those spice bottles is fine.

Cajun seasoning is also easy and cheap to make:
Mix 1 Tablespoon of Thyme, Oregano, Black pepper, Onion powder, Cayenne pepper.....Add 2 Tablespoons of garlic powder, Salt, and Paprika. Mix well....Done!
This is the basic recipe - you can mix the portions to your taste.

I prefer a buttermilk pancake mix / potato flake mix 50/50...Of course with the cajun seasoning.

There's a fish coating that's made by Ice Team Power stick Rocky Madsen up in Ontario Canada somewhre and it's called "Fish Crisp".
It's the best fish coating that i've ever used and if you knew me, you'd plainly see that I've eaten my fair share of walleye fillets (and others) over the years !
Originally, it was sent to me by a couple buddies in Saskatchewan and it became an immediate hit around here in Central New York.
Most of the big chain grocery stores in the upper mid west and Canada carry it so it shouldn't be too hard to find.
They do have a cajun fish coating too but my next question is.......Why would ou want to put cajun on the incredible tasting walleye fillets ??
Save the cajun for the white bass, Rock bass and other fish that need to be doctored up !

Either way, you can't beat "fish Crisp"
No egg, milk or any other ingredient needed ! Just shake the fillets in a bag of Fish Crisp and give them the hot oil bath !
