we have a great walleye fisherie in the genesee river here in ny.
but i would not eat them because they taste like the river. they are very healthy looking fish and put up a good fight, the fillets look good, but they have that stinky river smell. so i practice a lot of c&r which is good. my question is. is there anyway to get that fishy river smell out of them. i heard about leaving them in milk over night. still do not think i would eat them. any thoughts or different ways to prepare them, to make them eatable. great site here i have learned a lot.

Bleed, filet & remove any fatty tissue from the flesh as soon as you catch them, then toss then on ice in a zip-lock bag.

(I eat a lot of river walleye and it is them lake fish that smell and taste funny to me EH!)

I like to soak filets in 7UP for 15 to 20 minutes before frying. Seems to work real good.
