In my Army days, I had a Sargent Major named Rufus P. Johnson. He was so dark, the sun didn't reflect from his skin. He was also huge! When I asked him how to find a good catfish cafe, he advised the following. Ignore the pretty, slim, leggy waitress at front of the cafe. Try to get a glimse of the kitchen. You're looking for a black woman as wide as she is tall, with upper arms the hang down at least 6". That's a woman who knows how to deep fat fry. He claimed he knew this because his wife was one of the slender ones, and she was a lousy cook. I followed his advice, and the southern fried catfish was heavenly.
