Default Feedback Please

OK, just took my 1900 Pro-V out for the first time this year with it's new motor and looking for some feedback as to the results and see if anyone with exact or real similar set up has to offer. Here are the specs

1900 Pro V
225 Verado w/21P Tempest (stock plugs)
5850-6150 54-57 MPH on flat to 2 foot chop
2 Guys tourney loaded
Engine mounted 2 hole from top

The reason I ask is that I thought I should be hitting closer to the middle to top end range for RPM's and getting closer to 58-60 MPH. I did play with the trim levels to vary the RPM's and speed. Also when running on flat water we were experiencing some bounce in the bow when timed out at WOT, any thoughts on that?
