Default Snow Goose jerkey recipes?

Hi all we got a bunch of snow geese yesterday looking for some great tasting jerkey recipes.

I have a dehydrator and smoker available.

Put that whole bird in the smoker with the skin left on it and smoke away. This is how we do almost all are honkers. The drum stick is almost the best part of it.

Put the whole bird in. Go down to the store and buy any meat on the counter. Return home and grill and eat your meat. Take goose out of dehydrator and throw it in the trash. JK, but only sorta w sky carp.

Best thing I can recommend is to find a good local locker and have them make it for you. I will never say that snow geese are bad, you just have to put time into it.

I make some pretty kick butt waterfowl jerky. I grind mine. Then I use a jerky seasoning mix. My favorite is LEM cracked pepper. Last weekend I did 20 lbs of jerky. I do mine on the smoker as well. The guys at work can't get enough of it. We have an instructor down from Massachusetts and he likes it so well when it gets back he is going to use store bought fowl to recreate it.

I also do snack sticks. I use 80% goose, 20% pork when doing these. About a month ago I did 10 lbs worth of snack sticks. I think they lasted 5 days.
