788c settings

i did a search and read that 11 is a correct setting for my sensitivity? is this correct for the 788? the search i read was on the 8.. or 9.. also thay said to match scroll speed with boat speed which makes great sense. i'm not sure what boat speeds match what scroll speeds though, number wise. any ideas? should i set the sensitivity up until i see some stuff at the surface on the graph or just until that stuff goes away? when i turn it up, it shows lots of stuff but is that stuff interference or what? yes i'm confused
