Hey, thats a good question!

I haven't bought one yet, but a contratcor I hired showed me this new knife sharpener made by Snap-On Tools.

3 swipes and my knife was sharp as a razor!

For about $5 Cabelas makes a diamond hook sharpener with a groove in it that only takes a few swipes.

For all my sharpening needs I use the Chefs Chioce 110 knife sharpening system. I have had it for years and purchased it from LaBells some time ago. Works great on the hunting/butchering knives and have used it only once on my fillet knives and it does a very good job of sharpening the knives.

It plugs in to 110V and has three different stones depending on how bad off your knives are. If the knives are bad start with the coarse stone and work to the medium stone then the fine stone. If you need a touch up the fine stone may be all you need or maybe the medium then fine.

There are magnets on either side of the stones so that the knife is held at the proper angle while passing the knife through the stone. Pretty fool proof. Works great for me.
