Default Looking for great fishing spots in SE USA

Looking for advice from people who fish in the south. I plan to retire this summer and will be heading south from Michigan next fall and winter to do some one week trips.
Need a place where I can camp with my truck camper and use my own boat.
Willing to hire a guide for first day to get some local knowledge.
I prefer to fish for great tasting fish over game fish. Bluegills, perch, crappies, walleye, reds,etc.
Where would you go if you had a week to fish?
Could you suggest a great 'hotspot' in SE USA (Texas to north Florida and as far north as Tennessee) for the following times:
early Novemberearly December
mid January
mid February
mid March

We have a great Crappie Lake near me in Arkansas, Blue Mountain Lake. March is usually the best month to fish it. Depending on weather, spawn is normally last week of March to first week of April. I have better luck pre-spawn when they are staged on brush tops in 5-8' of water. There is a 9" length limit on crappie, 10-14" fish are common with occasional fish to 18". Limit is 20 per person per day. There is beautiful campgrounds there, run by the Corp of Engineers. 15$ a day for full hook-ups, if you have golden age pass it is 7.50 per day. Several boat launches there and bait shops in immediate area. There is also several smaller lakes in the area that have good bluegill and redear fishing. If your interested let me know I might even be able to show you a few good spots and give you a few local pointers. I've fished the lake all my life.

Lake Stockton in Missouri is a up and coming walleye lake with good crappie and white bass fishing also. I would be more than happy to show you the Lake. Good camping sites on lake and usually not booked up in spring. would reccomend late april thru may for walleyes and crappies together. My number is 417 886 2046 or best to e-mail me.
