If you listen closely you will hear the blade skimming accross the bones on the head to tail cut. The most important thing is to have a quality fillet knife. Electric fillet knives work well too. They are faster, and I use one if I have a lot of white bass to fillet, but there is more potential to make a mistake a waste the precious meat. For walleye I like to use a traditional knife.

I use an electric.
I start at the head with the fish on its side. I make a cut from the dorsal to the belly without cutting thru the back bone. Then I make a cut from the head to the tail cutting thru the rib cage. Keep the blade pointed a a slight angle down into the back bone but not so much as to cut thru it. Stop before you have the fliiet totally cut off the tail. Then flip the fillet over-skin side down and cut off the skin. By not cuttin totally thru at the tail you leave somoething attached to hold on to when skinning. Once the meat is off the skin I cut the rib cage out. You are done. Some time I zipper the fish to remove the bones in the latteral line. I make a cut on either side of the lat line at the tail end of the fillet. I pull on half off and the pull the bones off from the 2nd piece.

Then repeat on the other side.

It is a little easier to show then write about.

Love 'em, but... and this is a little embarrassing ... have never actually cut them out myself. What is the best way to do this?
