Default Another Knife Question - 440 Stainless Steel v. 420

What's the difference between a 420 or 420 HC stainless steel knife blade and a 440?

Thanks.

Thumbs up

440 is a higher grade ...harder, smoother and better for use as a knife blade.
It will produce a sharper and more durable edge.
