Default Steering - R-N-P versus Hydraulic

I'm looking at a couple different steering set-ups and could use some insights. I'm looking at two different 18ft boat aluminum deep v boats. Both are powered by Merc 150's. One boat has rack-n-pinion and the other has hydraulic. Am I going to notice anything significantly different on the water? Is there a difference at full speed versus idling pace?
