Glad you liked it! Mark, you really need to make the biscuits...they are so easy to make and are definitely worth the little extra effort! Best buttermilk biscuits on the planet. They are super light and fluffy.

Thanks for sharing. We love B&G and will try this one next time.
You mentioned fried spam. When I was a youngin, Dad would make us 'spam poopies'. Fried spam with pancake batter poured over. Cook like a and eat like pancakes. Simply wonderful. A poor man's pig's in a blanket.

He would also make us 'fried mush'. On Friday night he made a pot of corn meal, much like cream of wheat. Then he would pour the 'mush' into a cassarole dish and let cool. The mush solidifies a bit. In the morning, he sliced 1/8th inch sections width-wise and fried them in a pan. It takes a while to get both sides crispy brown, but add butter and maple syrup and you are happy happy.

Dad would only make these as a reward for good grades, an achievment or special occasions like birthdays. We had to earn it.

Haven't had fired mush since childhood, but Spam Poopies are part of our Fly-in Breakfast rotation.
