I keep the peanut oil in my Cajun Fryer for 6 months or more. I filter it and clean the cooker about every half dozen fries but continue to use it. The cooker sits in my garage with the oil in it. I've never refrigerated it and it always does a good job.

maybe YOU cant but I CAN. you dont sir fry or saute in a cup of oil. Maybe a tablespoon or two.

I just did a meal for 4 with beer batter deep fried fish last Sat

I deep fry all my fish in a small deep fryer (Fry Daddy?). The inside pot is removeable. After straining the oil, it goes back into the pot and into the freezer. The oil is rock hard in the freezer and will not go bad. I never leave used oil at room temp, it's the fridge or freezer. I have plenty of room in my bait/beer fridge (freezer) anyways.

I use Canola oil primarily.
