Question Squirrel recipe

I skinned and gutted one and cooked it on a stick over an open fire. Taste like eating a shoe sole. I know there are better ways to cook. I had a friend say to par boil first.

Never tried to eat one but here's a recipe...

SQUIRREL MAGNIFICENT

Prepare squirrel (remove waxy scent glands from foreleg) and cut into serving pieces. Moisten meat and rub with salt and pepper, then cover with flour on all sides. Cut up some bacon and fry until crisp. Add the floured squirrel pieces and fry with the bacon for 20 minutes or until browned. Add lemon juice, 1/3 cup beef broth and a diced onion. Cover tightly and simmer for 2 hours. Drink beer until hungry.

Funny thing is if you leave a deer out in the woods for 3-4 weeks to age after shooting it you can get them to taste just like squirrel.

Coat squirrel pieces in seasoned flour and brown in butter or olive oil in a cast iron skillet. deglaze pan with red or white wine and add your choice of "stew" veggies and herbs. Add a cup or two of water and cover.It can be finished in the oven or on the stove top. simmer for several hours or until tender. Serve with crusty bread or biscuits.

You forgot to tell us what brand of beer.

New Glarus Brewing Co. in New Glarus Wisconsin makes the perfect beverage to go with that dish.....it's called "Fat Squirrel Ale". Very tasty, and if you drink enough of them that fried squirrel will be mighty good!
