Legendary Recipes

Baked, broiled, grilled or fried to Legendary Northwoods Breading/Batter Mix makes a delicious meal perfectly seasoned, and beautifully golden brown every time.


Preparing food with Legendary Northwoods is as simple as 1, 2, 3.

1. Moisten food with water

2. Place moistened food in a plastic bag with Legendary Northwoods Breading
Seal bag. Shake bag until food is evenly covered with breading.

3. Remove food from the bag, let stand for 30 seconds and cook according to recipe.


Pan Fried Specialties
Chicken
Prepare chicken with Legendary Northwoods. Put about an inch of oil in your frying pan. Be sure to preheat your oil before you place your chicken in the pan (see tip above). First sear one side then the other. This will keep the chicken moist. Then let it cook for about 20 to 30 minutes depending on the size of your chicken pieces. Turn occasionally. If the chicken is browning too rapidly, reduce your heat and continue to cook until done.


Pork Chops
To make pan fried pork chops, moisten your chops in water, place them in Legendary Northwoods Breading, wait 30 seconds and place them in a shallow pan with hot oil. Simple, but oh so good! 

When pan frying, make sure your oil is hot. If not, your food
will absorb the oil and be soggy, not crisp.

Oven Specialties
Preheat oven to 350
Baked Fish/Chicken/Wild Fowl
Try this simple and quick meal.
Spray a rack with non-stick oven spray and place rack in a metal drip pan. Prepare Legendary Northwoods fish fillets, chicken or wild fowl put on rack and place in oven. Cooking time will vary based on the thickness of your fillets, chicken or wild fowl.


Baked Potato Wedges / French Fries
Cut potatoes into quarters, moisten potatoes with water, press raw edges of potato in Legendary Northwoods Walleye Breading. Place your potatoes on a cookie sheet, skin down. Bake for approximately 45 minutes.


French Fries
Moisten fresh cut or frozen fries with water, and coat with breading mix. Spray a cookie sheet with non stick spray. Place your fries on the cookie sheet. Turn fries once and continue to bake until golden brown and tender. Approximate time 20 to 30 minutes


Roasts:
Beef, Pork, or Venison
Pour Legendary Northwoods Walleye Breading Mix on a plate or platter, roll your moistened roast in the breading, wait 30 seconds. Take a large skillet, spray it with a non stick spray, or coat with a little oil. Preheat pan on high heat, then place your roast in the hot skillet. Rotate roast frequently until all sides are brown. This will sear the meat and preserve flavorful juices. Place your roast on a roasting pan rack. Check roast with thermometer for  correct inside temperature.


Legendary Northwoods Gravy
Take the drippings from your roast, mix with several tablespoons of Legendary Northwoods  Breading. Stir mixture continuously over heat heat until thickened. If gravy is too thin, slowly add more breading a tablespoon at a time while you continue to stir. If the gravy is too thick, slowly add more drippings or water until you reach the desired consistency.


Meat Loaf
HERE'S A TIP! Make meat loaf the way you like it. But instead of using eggs, bread or cracker crumbs, substitute 2 tablespoons of Legendary Northwoods Breading per pound of ground meat, then cook as usual. It's delicious! 

Grilled/Broiled Specialties
Grilled Fish
Spray grill rack with non-stick spray, place your fillets directly on grate and enjoy the great taste of barbecue!


Grilled Chicken or Wild Fowl
Cut chicken or wild fowl into desired pieces, follow breading steps above and place on a preheated grill.


Broiled Pork Chops
Enjoy pork chops and control the fat in your diet. Spray a baking rack with non stick spray and place in a metal pan. Place breaded chops on the rack and set your oven to broil. Cook about 7 to 10 minutes per side. The breading seals the flavor in and keeps them tender, moist and full of flavor. Try this same recipe when serving venison chops.


Party Specialties
A customer's recipe: Meatball hors d'oeuvres
Make your favorite meatballs, but before you bake them, roll them in a coating of Legendary Northwoods Breading. This gives them a flavorful coating that will impress your most finicky guests.


Zesty Shish Kabobs
Here's a real people pleaser and one the whole family can enjoy, even the kids. Put out a variety of breaded bakeable vegetables like mushrooms, onions, new potatoes, tomatoes, and fruit, like pineapple, apples or pears cut into bite size pieces. Select your favorite: beef, chicken or wild game, shrimp, scallops or chunks of fish. Cut them into small pieces. Bread the meat or seafood and quickly seer them in a hot frying pan for just a minute. Now let the fun begin, give everyone a skewer and let them build their own special shish kabobs. Put your kabobs on a charcoal grill or oven bake at 325 degrees. This will be a family favorite for years to come!


Deep Fried Specialties with Legendary Northwoods Panfish Breading

Remember: A general rule when you deep fry: When the fried food floats, it's done.


Deep Fried Chicken
Everyone's favorite. Cut your chicken into desired pieces: halves, quarters or eighths. Moisten your chicken with water and place them in a plastic bag with Legendary Northwoods Breading. Give it a few shakes and place them in hot oil. When the chicken begins to float it's done. 


Extra Crispy Deep Fried Chicken
If you like extra crispy chicken, try this. First bread your chicken in the same fashion as the deep fried chicken. In a separate bowl combine half cup of milk, and one egg. Beat them until well mixed. Place your already breaded chicken into this milk and egg wash. Remove and let drain for a moment, then deep fry in hot oil. When it begins to float, enjoy!


Deep Fried Shrimp
This is one of my personal favorites.
Buy the size of shrimp or prawns you like. Remove the shell completely, or for a fancier look leave the last section and the tail. Devein them by making a small cut along the top of the shrimp and remove that dark strip or vein. If you wish to butterfly them, continue by making the cut deeper almost all the way through. Fan out the shrimp and moisten with water. Place  them in Legendary Northwoods Breading. Wait about 30 seconds and deep fry them in hot oil. What a treat!


Fish Tip for Beer Breaded Fish
Instead of a heavy beer batter, enjoy the fish. Take your fish fillets, put them in a zipper-sealed plastic bag. Pour beer in the bag with the fish and let it stand about 20 minutes. Remove the fillets and put them in a bag with Legendary Northwoods Breading, wait about 30 seconds and you're ready to cook. WOW, what a treat! BEER BREADED FISH! All the great flavor of beer batter, but with a thin crispy coating.
