Crappie Recipes

The only way i have ever done crappie fillets is to shake in flour and fry in butter with a little salt and pepper. Not that this does not taste great but looking to see if anyone does them any differently. for my money, crappie is even better eating than walleye |

We just ate some as fish tacos. Tons of recipes online. Sprinkle with cumin, red pepper and onion powder. Bake in oven til flaky. They were fabulous!

I have one breading mix I use for all deep fried fish.
The only thing I do differently for crappie is add a little more Zataran's to the mix. The particular breading really helps holds the fillets together, as crappie has a tendency to fall apart a bit. (Not great by itself BTW) |

I use the dry, wet, dry technique for all fish frying. For fish tacos, dip fillets into corn starch, then into your favorite hot sauce, then into a dry mixture...breading mix, cracker crumbs, crushed corn chips, etc. Let them sit for a few minutes to become tacky before frying. It helps keep the coating from coming off during cooking. The corn starch makes them extra crispy.

I like shaking mine in Bisquick with just salt and pepper - then I toss em in the deep fryer.

Wintertime Crappies are pretty spectacular. More firm flesh for sure. I like the 10 to 11 inchers the best I suppose. Any bigger than that they get skinned and broiled with lemon pepper and butter. The smaller fisher go into a combo of Andy's and Drakes, 50/50 dry, fried in 350 veg oil. As with any fish, DO NOT OVER COOK.

Kabeles (Spirit lake Iowa) light breading, fried lightly in olive oil for about 1 minute....spectacular.

I would not argue winter time crappie delicious ! Summer time crappie not so much !
