Walleye Taco or Wrap
Cook a fillet your favorite method. Use smaller fillets if you like it crisper. Get a 10" or 12" soft wrap. Put the fillet in the middle and then put all the stuff you like on a Taco in the center, Taco sauce, tomatoes, cheese, sour cream onions, peppers, etc. Hard to put it down after the first bite. Try it, I guarantee you'll like it. |

Panko breading is the best. Only problem is, it has no inherent flavoring of its own. You have to pre season it to your own taste. Which most people would rather do.

1. Dust fillets with flour (I put them in a bag with 2 or 3 tablespoons of flour and shake. 2. Dredge through the egg wash. 3. Coat with Panko 4. Pan fry in a little vegetable oil. Never tried them deep fried since we don't do fish that way anymore. 2nd favorite is Shore Lunch brand's oven version. Egg dip, cover with the Shore Lunch oven mix, bake on a cookie sheet until crispy. No oil, no frying. Excellent. P.S. Swap the beer for Old Grandad on the rocks.......just sip it slower!! |

I like the milk, flour, egg, crushed corn flakes, and also one of my favorites is shore lunch and uncle buck's cajun
I also like to put filets on aluminum foil and with butter and lemon pepper, close up the foil and place on the grill. I am not very hard to please, I love walleye any way it is cooked

RE the artichoke tartar sauce, do you use plain canned artichoke hearts, or the marinated ones?
One of my favorite recipes: Dip the filets in beaten egg. Shake in a ziploc with half grated parmesan cheese and half Italian bread crumbs. Fry gently to golden brown in olive oil. Last edited by @Lunker; 03-06-2010 at 10:46 AM. |

the favorite at our house is to get a med sized grill bag, 2 walleyes (cut into chunks if desired) add onion, chives, salt (to taste), lemon pepper, green peppers just add all ingredients to bag seal then throw on grill for about 6 minutes on low-medium. enjoy
