I’ll have 2 Helix 10s. My understanding is that they are both side image/down image units(Mega G3N SI). The transducer in the Ulterra is Mega Down/Side. I’m switching from Lowrance so have no experience with Humminbird

Your plan sounds correct. The Y cables are not the same. One is for splitting the 2D chirp from the SI/DI transducers the other splits the 2 SI transducers(Left and Right) 9 M SIDB Y and 9 M SILR Y.
