Using the last of venison & looking for recommendations on a spice kit from one of the more available sources. [Cabelas, Hi Mountain, Backwoods & Leggs]

18 lbs venison, 3lbs beef(I use hamburger) 4 lbs pork sausage,2 1/2 tbsp ground pepper, 1cup tender quick, 1-1/4 cup brown sugar, 2-1/2tbsp coriander 2-1/2tbsp ground mustard,2 tsp garlic powder. This makes a 25lbs batch. I smoke with hickory until internal meat temp is 185-190.

We really like the jalapeno blend. We add the cheese to the mix and it's great stuff. The regular blend is very good too.

I have made the Cabelas summer sausage and it turns out very good. Just follow the directions. It comes in 2 15lb batches. Next time I will add some jalapones.
